Crunchy Cucumber and Potato Salad
The salad is very healthy yet a most wanted dish in southern countries. Even though we have it with rice, most western countries have salad as a main meal. This is a perfect dish for vegans as it does not contain any meat. Of course, you can skip the eggs if you like.
This is a great meal for Lunch or as a Dinner as the preparation time is much less than cooking a whole meal.
Ingredients:
- Cucumber
- Some Boiled Potatoes
- A small tomato
- 1 Boiled Egg
- 1 Big Onion
For the dressing:
- Mayonnaise
- Some Ketchup
- Salt to taste
- grind pepper
Preparation
Cut the cucumber, potatoes, tomato, and egg in to bite size chunks, Mince the onions and mix all into a bowl.
For the dressing:
Add Mayonnaise (You can use vegan mayo if you like), ketchup, salt, and peper. Combine everything and add it to the previously prepared salad ingredients. Combine everything well and serve.
Optional – Add some bacon or sausages if you wish to make it a non-vegan meal for your loved ones.
